FO: Candied Pecan Biscotti

Can you believe that I’ve never made biscotti before? They are a truly Italian cookie, yet I’ve never tried them. My first batch ever turned out pretty tasty, but I think I can still improve on them.

These are Candied Pecan Biscotti, from a recipe on Joy the Baker’s blog. The candy coating on the nuts means that these are a three step baking process, not just two steps. The best part may be that extra candied nuts are built into the recipe, so you have something sweet and spicy to snack on while the cookies are (twice) baking. The cookie dough also has a bit of spice to it, so these are very flavourful treats.

I’m happy with how they turned out for a first attempt, but it was a bit crumbly, and some of the cookies broke apart while I was slicing them to bake again. Next time, there will need to be a bit more liquid to hold the dough together.
